This steak is a favorite of midwesterners because of it's bold flavor. It is naturally leaner than a Delmonico or N.Y. Strip with just enough marbling to enhance the taste and texture of the meat. Delicious when broiled or grilled.

Preparation Instructions:

Grilling: Heat coals, and cook over medium to low heat to desired doneness. Rare: Bright red center & light pink outside, 140 degrees. Medium: Light pink center & brown outside, 160 degrees. Well: Brown consistently throughout, 170 degrees.
